I know this, rationally. I studied engineering, dammit! But fear is irrational.
The street corner is more vivid than than the reality as an artistic choice. Fear has more emotional weight and therefore only the things I'm afraid of (the fire) is in color. Living as a hobo is a complete fantasy life created by that fear, so all of it gets color.

Yeah, this house has the same thing. When it doesn't light after the first few seconds, I turn off the gas, wait a moment for it to dissipate, then try again.
However, none of this is really that necessary. As the gas dissipates, it follows the inverse square law, and becomes so thin in the air that ignition becomes both unlikely and not very damaging. The only way to get a scenario like that of which you're thinking is to turn on all the hobs, full blast, for several minutes with sealed windows and doors before lighting.
