Despite resembling a sheep, with some goat and cow mixed in, and therefore resembling peaceful livestock (or, in Minecraft terms, "passive mobs"*), I can imagine these guys actually being fairly effective fighters, with strong bodies and thick hides and thick hair that protects them quite well even before they put on armor.
 
(*Yes, I know Minecraft goats are actually considered "neutral" mobs and can and will attack players.)
