Grilled Rosemary Chicken Kebabs w/ Sweet n Sour Orange Sauce & Italian Herb Fries

It's sweet, it's sour, it's hearty, it's healthy!

For those of you with a small budget, this is something really easy to enjoy! These recipes serve from 2-4 people and it's easy to make, easy on the wallet, and easily a hit :3


Italian Herb Baked Fries

Ingredients

  • 2 lbs russet potatoes
  • 2 tbsp olive oil, plus more for the pan
  • salt and pepper To Taste
  • 1tbsp Italian seasoning (if you don't have an actual Italian seasoning: parsley, oregano, thyme, maybe even a little basil will do/ can easily put more spices on there to taste)
  • 1/4cup Parmesan Reggiano

Directions

  1. Preheat oven to 450*F and coat a baking sheet/pan with olive oil or non-stick cooking spray.
  2. Wash the potatoes and then cut in half sideways, then into 1/8ths from the end-down. Place in a bowl and allow them to soak in cold water until ready to bake.
  3. Remove the potatoes from the water, dry, and then toss them in olive oil, salt and pepper and the Italian seasonings. Lay the wedges on the baking pan in a single layer. Sprinkle half the Parmesan Reggiano over the wedges.
  4. Bake the fries for 10 minutes, flip the fries and sprinkle the rest of the cheese onto them, and then bake for another 10 minutes or until golden and crispy.

Grilled Rosemary Chicken Kebabs w/ Sweet n Sour Orange Sauce

Ingredients

  • 1 tbsp minced, fresh rosemary, divided (2 tsp for chicken, 1 tsp for sauce)
  • 1tsp brown sugar
  • 1 tsp kosher salt (I used sea salt instead, still worked very well)
  • 1 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (I used crushed cayenne because we have some leftover from last summer's garden)
  • 1 tbsp olive oil
  • 1 1/2 lb boneless, skinless chicken thighs, trimmed of excess fat and cut into 1inch pieces/cubes
  • 1cup orange marmalade
  • 2 1/2 tsp rice vinegar

Special equipment

  • Metal or wooden skewers (I needed about 6 skewers for about 7inches of chicken on them.)

Directions

  1. Combine 2 tsp of the rosemary, add the brown sugar, salt, pepper and red pepper flakes to a small bowl. Mix until evenly done.
  2. Cut the chicken into 1 inch pieces and cubes, placing them in a medium bowl. Drizzle the olive oil over it and toss to coat the chicken evenly. Slowly sprinkle in the spice mixture and toss until evenly coated with it too.(Don't be afraid to get your hands in there to evenly coat everything. Just make sure to wash your hands before and after doing so, don't need to get any kind of bacteria that may be in there in the food or on your hands!)
  3. Preheat the grill to medium-high heat, 400-450*F. Oil the grates lightly, and let it heat up. While it is doing so, thread the chicken cubes/pieces onto the skewers (I used metal ones as shown in the photo. If you use wooden ones, I suggest soaking them in cold water beforehand so they don't burn much. Also, don't forget to wash your hands again, still messing with raw chicken at the moment!) and set aside.
  4. After doing so with the skewers, go ahead and make the dipping sauce. Combine the last teaspoon of rosemary, the rice vinegar, and the orange marmalade in a small saucepan. Set over low heat and stir until the mixture is heated throughout. Cover and turn off the heat. Put to the side.
  5. Going back to the kebabs, place them onto the grill and cook for about 12-15 minutes, turning them every 3 minutes until they are slightly charred on the sides.
  6. Pull the kebabs off the grill and place them on a platter. Let them sit for a few minutes (if using metal skewers, and even the wood ones too, WATCH OUT AS THEY ARE HOT) and then serve with the warm dipping sauce.

Reason being having the Fries recipe over the Chicken one, while the fries are baking, you can work on the chicken. If you can't multitask like that, then just do one after the other.

These recipes together make a wonderful dinner, and can easily feed 2 with possible leftovers, 3 with little leftovers, and four without any leftovers. Like I said at the top, it's pretty cheap. I only had to buy the marmalade, chicken and potatoes for having all the other ingredients already, and it only cost me about $10. Split that price between multiple people or saving the rest for later meals and you've got yourself a bargain!
