Creamy Potato Soup

My friend Moony REALLY likes potato soup. So, she found a recipe we could mooch off of and create a better one off of it! Needless to say, this turned out really tasty and gave a good 7 bowlfuls of soup!


Creamy Potato Soup

Ingredients

  • 4 medium-large potatoes, roughly chopped (I used russet, but who's to say you cant use sweet potatoes? Also, I decided to keep the skins on the potato as it gives it a bit more flavor, color, and the skins are healthy for you!)
  • 1 medium red onion, diced
  • 3 1/2 cups water (this should be enough to have the water level right with the top layer of chopped veggies. It doesn't have to be above the pieces, but at least touching them as they will boil down into the water)
  • 1 cup sour cream
  • 3/4 cup milk (or heavy cream, your choice)
  • 4 tbsp butter
  • 1 1/2 tsp paprika
  • 1/2 cup bacon bits or crunched-up cooked bacon
  • Salt and Pepper to taste

Directions

  1. In a large saucepan over medium heat, add the potatoes, onion, and water. Bring to a boil and then lower the heat for it to simmer. Covering the pan/pot, cook it for 20-30 minutes, until the potatoes are able to be mashed easily.
  2. Carefully press a potato masher through the soup until most of the potatoes are broken up. (it should be around a soft mashed potato consistency)
  3. Add the sour cream, milk, butter, salt and pepper, and bacon to the soup. Warm the soup back up and stir until the new ingredients are mixed in well. Add more salt and pepper to satisfaction.

Garnish with more bacon, shredded cheese, hot sauce, parsley, thyme. Whatever you fancy.


This recipe is really easy, and most if not all of these ingredients will most likely be in your home already!

    Alright! Last week I made his recipe and it came out amazing!!! I'm trying it again and adding a little more filler, extra cream, corn, green onions and garlic salt instead of regular salt. It's fantastic!!!! Thank you so much for this great recipe!
