Cilantro Lime Tilapia & Shrimp

Today was a great day to cook, and what better than to start off spring with a dish that's just as colorful? This dish was a culmination of about 3 recipes, each tweaked to own personal preferences and it came out amazing! It's a healthy meal that will make you and your wallet happy.


Cilantro Lime Tilapia & Shrimp

Ingredients:

  • 1 1/2 lbs tilapia fillets
  • 1 lbs shrimp, shelled and de-veined (used 40/60 sized shrimp)
  • 2 tbsp olive oil
  • zest from 2 limes
  • juice of two limes, ~1/4 cup
  • 3 tbsp chopped, fresh cilantro
  • 1 1/2 tsp Old Bay Seasoning, plus more to season shrimp
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • skewers for shrimp

  • Mango Salsa (recipe for that found in the link provided)

Cilantro Lime Rice

  • 2 cups long-grain brown rice
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro
  • 2 tbsp lime juice
  • zest of 1 lime
  • 2 tbsp water
  • 1 tbsp olive oil
  • 2 garlic cloves

Directions:

For Tilapia & Shrimp
1. If using wooden skewers, soak in warm water for at least 30 min (do it before or after making the marinade, doesn't really matter. They'll be soft by the time the fish is ready to cook!). Mix the olive oil, lime zest and juice, cilantro, Old Bay, sugar, salt & pepper together in a large bowl (large enough to hold the fish too). Add the tilapia and rub the marinade into the fillets. Cover and chill for at least 30 minutes in the fridge. If desired, the fish can marinate overnight.
2. Skewer the shrimp in groups of 4-6. dust the top of the shrimp with Old Bay Seasoning and set aside. Heating a large skillet and spraying it with nonstick spray, take the marinated tilapia fillets and place a few at a time, cooking on each side for a few minutes until cooked thru. Set finished fillets onto a large plate to rest and using same skillet, cook the shrimp, also a few minutes on each side until done.

For the Rice
1. In a medium saucepan/pot, bring 4 cups of water and rice to a boil. Let the water boil down to just above the rice and turn off the heat, covering with a lid.
2. In a blender or food processor, combine the cilantro, lime juice and zest, water, olive oil, and garlic. Blend the mixture until smooth and then add the onion. Uncovering the rice, pour in the mixture and fluff/combine with a fork.

Plate Presentation
Scoop a mound of rice onto the plate, place the tilapia on top, spoon on a bit of the mango salsa over that, and place the shrimp over that, de-skewered.

Garnish with lime wedges, cilantro, fresno pepper, and avocado slices.


Despite this having seemingly a lot to do, broken up, into each separate recipe, this dish is actually Really easy to make, it just takes a bit to prep. Luckily, as the fish marinates, you can work on the salsa and/or start the rice. Let alone, the price tag on this is roughly $20 for 4-6 portions. Talk about great taste for cheap! Be ready for the left overs to not stay in the fridge for long!
