This is the result of one of my "Dollar Store Challenges." Though to be honest since I lost my job in IT a year and a half ago I've been stuck working a lower paying job and thus spending more of my money at the local Dollar Trees. A cheap flavorful meal that's not too difficult to make.
Ingredients:
1 15oz can of Potatoes
1 15oz can of sweet corn
2 5oz cans of chicken (the kind in gravy)
Heavy cream or Milk + Butter/Margarine
Flour
Red Pepper Flakes
Minced Garlic
dehydrated chopped onion
Salt
Pepper
Chicken Broth/Stock
lemon juice
Step 1: Open up your cans and cut up your potatoes into smaller chunks then add them into a medium sized pot with the sweet corn. Scrape the chick out of the cans into either a bowl or the pot with a fork so its like fine chicken shreds. If you did it with a bowl, add it to the pot when done breaking up the chicken.
Step 2: Add about a table spoon of your minced garlic and the chopped onion. Then top off everything with the chicken stock/broth so that its all completely submerged. At this point add your salt to taste then bring to a boil then let it simmer with a lid on the pot.
Step 3: If you don't have heavy cream then grab a large pot and add a few table spoons of margarine or butter. Put it on medium heat to melt it. Once melted add your milk and mix it well with a whisk.
At this point if you have heavy cream or just mixed butter or milk its the same deal: add some flour and mix well with the whisk until you achieved your desired thickness.
Step 4: Add the contents of the medium sized pot to the large pot with your cream and mix thoroughly. Now add your black pepper and red pepper flakes to taste. Add a dash of lemon juice and add more salt if needed then let simmer for about 5 minutes.
Step 5: Scoop into bowls with a ladle and add crackers. ENJOY!
