Chicken Tortilla Soup

This recipe was given to me by my friend, Moony , as her mom makes it a lot and ohohoho, it's tasty @w@ Bold flavor, hearty, and makes a TON of soup. Be ready with the giant stock pot, this thing will fill 'er up!


Chicken Tortilla Soup

Ingredients

  • 1cup chopped white onion
  • 6 tsp minced garlic (used 6 cloves)
  • 1/4 cup olive oil
  • One 28 oz can Hunts diced tomatoes
  • Two 16 oz cans Rotel tomatoes
  • 2 tsp beef base
  • 4 cans (or 2 cartons) chicken stock
  • 1 whole roasted chicken, deboned and chunked/shredded (I even put the skin into the soup, it has so much flavor to it!)
  • One 1 oz package of taco seasoning
  • 2 cans tomato soup (we used a regular Campbell's tomato soup, and also a Tomato Bisque can)
  • 1 1/2 tbsp cilantro

Directions

  1. Saute the onions and garlic in the olive oil until tender, the onions will become somewhat transparent.
  2. Add in the diced tomatoes, Rotel tomatoes, chicken broth, taco seasoning, tomato soups, and cilantro (MAKE SURE YOU HAVE A LARGE POT OR MORE THAN ONE. Seriously, I am not kidding when I say that this recipe makes a lot. Our largest pot couldn't hold all of the soup and I had to split it between the large pot and another, smaller pot. Be warned, fellow food-lover XD ). Add in the chunks or shredded chicken.
  3. Bring the soup back to a boil and let it simmer for 10 minutes, covered.
  4. Turn off stove and ladle a good few scoops of soup into your bowl. Enjoy~

Garnish it with Fritos, tortilla strips, sour cream, shredded cheese, bacon, hot sauce/tobasco, parmesan-reggiano, and/or herbs.


This soup has tons of flavor, I honestly can never get enough of it when Moony's mom makes it and has me over for dinner. We still somehow have two large bowls of the soup left in our fridge from when we made this batch at home. Go ahead and make a batch, you will Not regret it <3

    God that looks so fucking good right now <3 It's freezing in my house and I want nothing more then delicious soup.

    I enjoy that you put up your recipe too for us to try too instead of just putting up a oh so tempting picture.

      As I've said to others talking about the same, I find it mean for people just to post food and not even try to mention what goes into the dish. x3

      I've seen way too many food photos on tumblr and drool over them to find out that there is no linked recipe, its aggravating at times, lol

        Ugh and you've hit the nail right on the head! I completely agree with you. I love to cook and tumblr is like a treasure chest filled with awesome food, but rarely ever a recipe :c

        I'm glad at least you're fixing that, and I do plan to try some of these and let you know how they are <3

          Definitely, Tumblr is a treasure trove amongst the the diamonds for recipes. I watch a few decent food/recipe blogs on there: oohhhbaby, grilledcheesemeplease, sp00nful, yummyinmytumbly, gastrogirl, gourmetgaming, foodopia, foodkingdom, and peegaw.
