I'm trying to desensitize myself to spicy foods and have gotten to the point where I can tolerate "mild", or any of the Taco Bell sauces.

I'd call that "trying". Not trying would be avoiding spicy food altogether. Unfortunately, that leads to accidentally eating spicy food and not being prepared for it.

Also, speaking from experience, mild means something totally different to someone who eats spicy food every day reaches for the milk

You don't need to try, just eat mildly spicy food and before you know it you'll be up to stuff that dissolves your stomach. Hmm... not my best pitch..
