I'm feeling like I'm undercharging/undervaluing my work and my skill level. I'd really like some help revamping my price list to something that is fair to both commissioners AND to me, my time, and my effort.
I know this is a struggle that everyone deals with, but any insight that folks can provide would be greatly appreciated.
I agree with lemontrees. time yourself doing each type of work you do. it may be different for you, but I can usually work by the half hour or hour on some pieces an up to 4+ hours in one sitting. the value if your work should also reflect the skill you've fostered. if you've spent years practicing ad have made great technique of it, consider that as built into the work.
also consider minimum wage in your state.

This is just my opinion, but I think you should bump everything up by at least $10.
You need to consider how long it takes you to create something and come up with an hourly wage. If you are particularly slow, this might not work out well, but it's a start.
