Just a four-hour experimental painting of Sakuyamon. Of sorts. Just painted her mostly from memory and only looked couple details from references towards end, so she turned out little different variation, I guess.

Ok for my wondering mind, lets just use Renamon and Rika turning into Sakuyamon...if you strip the armor do you get a furred Rika or a human-ish Renamon?

She's basically an adult woman with Renamon-like armor and holy powers, so if you stripped off her armor you'd get a human woman (to my understanding, as she has no fox-like features herself outside of her armor).

I don't recall there being (and doubt there ever will be) an official definition so it is most likely up to the imagination of the beholder.
This beholder prefers the idea of at least 'animal ears/tail'.

I like that idea too, but all the pictures (canon ones, anyway) show her as a human woman with 'armor'. I still like your idea better, though. ^^
