I don't know what it is when I bake I find that a lot of my worries seem to dissipate for a short while. The smell of spices, herbs, and ingredients seem to wash away anything that is ailing my mind. A part of me is almost wisked away to fond memories of baking with family members during my years.

And not to mention... TASTY REWARDS AT THE END! OwO

Here is a recipe of my favourite type of cookie.

Hermit Cookie

1 Cup Vegetable shortening 250ml
1 1/2 Firmly packed brown sugar 375ml
1 Egg
1/2 Cup Milk
2 tsp Vanilla extract 10ml
3 3/4 Cup Quick Cooking Oats 900ml
1 1/4 Cup All purpose flour 300ml
1 tsp Salt 5ml
1 tsp Baking soda 5ml
1/2 tsp Cinnamon
1 1/4 cup Raisins 300ml
1 1/4 cup chopped nuts or chocolate chips 300ml
1 - Preheat oven to 190oC (375oF). Grease baking sheets or use cooking parchment paper.
2 - Warm vegetable shortening and mix with brown sugar, egg, milk and vanilla until well blended.
3 - Combine oats, flour, salt, baking soda, and cinnamon. Add to previous mixture of shortening and items. Mix well.
4 - Combine raisins and nuts/ chocolate chips to mixture. Mix well.
5 - Drop dough on baking sheets in heaping spoonfuls, or to your liking. Leaving at least 2cm (2 inches) between cookies.
6 - Bake for 10-12 minutes in oven until lightly browned. Cool for 2 minutes on baking sheet before moving. Enjoy
Makes 3 - 4 dozen cookies.
