Normally, I would only make Christmas foods during the month of December, but I had lemons and wanted to do something with them before they got bad. Anyway, I made this 2 days ago from Aimee Wood's The Unofficial Legend of Zelda cookbook. When it was finished setting, the jelly was thinner than usual. How did this happen? Well, the unwanted help went and added water to the lemon juice when I didn't have enough lemons to make the right amount of juice. If I knew this was going to happen, I would've added more pectin or some sugar to get the real texture of the jelly. Anyway, the "jelly" if you could call it that, tasted exactly like lemon. It also had a honey smell to it back when it was still warm and cooling in the pot.
