Depends on how big it is. Usually I use white gel pen (Sakura brand works the bets for me), but if I need a larger areas covered I'll use white india ink or a white paint pen. Those are harder to control, though. On this, I used the paint pen on her beak and in the lettering. All the other white is gel pen.

woah i had no idea white india ink even existed?? that's pretty sick because i love black india ink, may have to look into that

Yeah, I was really happy when I found it! It's got a bit of a different texture to it than black india ink, so be sure to play with it before using it on something you're proud of. :P
