I actually did die against her, but I think it was only because I underestimated how many hits I could dodge when I was already low HP and didn't heal...
If you constantly heal, Undyne isn't so hard, especially when you realize her trapping is limited.
As for the green heart, I thought it originally paralysed your feet, but looking more carefully, I realized that the heart gets surrounded by a green circle... And I'm pretty sure that isn't the shield your heart generates, because that one is blue.
So yeah, basically making the heart green makes it immovable and traps you in a bubble... but in exchange it generates a shield.
