Wanted to make my own version on it as well and based it on flying squid.
Holding the anchor and it's head can turn more brownish to imitate the steer wheel from a ship as it gets older.
Being ghost it can easily float in the water and use the anchor as a weapon.

Since it is also grass, it flourish in water and can extend most parts of it's body as vines.
Last defend mechanism would be dropping the anchor and dissappear in kelp or sea weed forests to regain it's health.
It will stay close to lush areas in the ocean and avoid open sea when it can.
