Poutine is a dish that originates from Quebec, though it's spread pretty much over Canada as far as I know (Ontario-centric knowledge so may not be ALL OF CANADA). Traditionally it is French fries with cheese curds and hot gravy on top so the curds get all melty. Nowadays places will often put other stuff on it (there's a place here that does all sorts of toppings, I like mine with mushrooms and peas) but you gotta have fries, curds (CURDS not just, like, a slice of American that isn't even real cheese you heathen), and gravy.
It's heaven.

I fucking hate American cheese OH MY GOD????? It's the grossest 'cheese' ever, veganism aside I would never touch that stuff. Holy shit. It's way worse than the vegan cheese we use that isn't even technically cheese. That said, I don't know if I've ever had curds? HMM.

WELL YOU ARE MISSING OUT ON CANADA FRIEND. There are some place that do poutine along borders (you know, New York and michigan) sometimes but it's not common and probably not as good (just like the US stuff over here is generally not that good--Taco Bell Canada is just an affront).
Vegan cheese is tough, I haven't met one yet that satisfied what I was looking for from it. :< But American, blaahdslfh. Yeah. I mean, it has occaassssssional uses since it melts nice but mostly bleehhhhhhh.
