While the lore says a phoenix is completely immortal, no hunter I've ever met has actually seen one. The last reported sighting in the states was back in the cowboy era.
If the hunter accounts from that age and before are to be believed, a phoenix can't be killed by things like gunshots and hangings which is perhaps why they thought back then that the phoenix is immortal.
Same thing goes for their powers. Supposedly they burn hot enough to incinerate just about anything by touch, save for iron. Like many creatures iron seems to at least deter a phoenix such as locking people behind iron bars in a cowboy jail cell, and it does seem to hurt them to touch it. If that can be used to kill them, however, is up for debate.
But the long and short of it is that these guys haven't been seen in close to 200 years so don't expect to run into one. This entry is more of a 'just in case' thing, because the way the world works there's no telling if they might come back one day.
