Pepperoni Pasta

One day a few months back, me and my mom decided that we were gonna just make something for food. Felt like having pasta and out came the cookbooks, finding this one in a couple. It's fairly simple to make, and on the somewhat cheaper side of cooking ^^


Pepperoni Pasta

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped (I used a red onion, but white or yellow are fine too, up to your taste)
  • 1 red bell pepper, seeded and chopped/diced
  • 1 orange bell pepper, seeded and chopped/diced
  • 1 800oz canned chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 8 oz (or more if you Really like pepperoni) pepperoni sausage/slices
  • 2 tbsp chopped parsley
  • 1 lb penne pasta
  • salt and pepper to taste (Surprisingly enough, I didn't need any salt or pepper! It came out wonderful all on it's own ^^ )

Directions:

  1. Heat the olive oil in a large saucepan. Add the onion and saute until softened, about 5 minutes or so (the onion pieces become translucent in sort, the opacity weakens if that makes sense ^^; ).
  2. Add the red and orange bell peppers, tomatoes with the juices from the cans, tomato paste, and paprika. Bring the mixture up to a boil.
  3. Add in the pepperoni, parsley, and season to taste with salt and pepper (Like I said, I didn't need to add anything to it, but it's up to you. Also, make sure that your pepperoni if in slices doesn't stick together in clumps. They taste great when they take on the flavors of the other ingredients). Stir well and bring back to a boil, reducing it then down to a simmer for 10-15 minutes.
  4. While that is simmering, bring a large heavy bottom pan/pot of water to a boil. Follow the instructions on the pasta box to fully cook them to the desired/recommended time, tender but firm to the bite. Drain the pasta and put it back into the pan/pot.
  5. Transfer the finished mixture/sauce over to the pasta and mix together well.

Serve, and enjoy!

Garnishing: I used parmesan reggiano and parsley, but could probably also use cracked black peppercorn also.


This is a pretty simple recipe to make, and honestly, the leftovers from it taste even better than freshly made (at least to me >w>). You can add sauteed mushrooms to the dish also! I did that for me and my dad and they were wonderful in it <3 The recipe makes about..6-8 servings of pasta.

    i been looking for somethin like this for years (not lookin hard but) when i was in highschool my friends mom made this when i came for dinner one night and it was amazing

    im vegetarian now but i can make this for my friends haha

      I'm sure you could use a meat/sausage substitute for the pepperoni if you wanted to!
