Mediterranean Herb Crusted Tilapia

My mom had found this recipe a while back and we decided to try it out on monday night. The original recipe calls for spinach in the crusting, but mom doesn't like spinach so...blah, it would have added a bit more in flavor and color but can't change her mind, she's stubborn <3


Mediterranean Herb Crusted Tilapia

Ingredients:

  • 5 to6 tilapia fillets
  • 1/2 tsp salt
  • 1/3 cup (5 1/3 oz) butter, melted
  • 1 tsp garlic, minced
  • 1 tsp marjoram
  • 3/4 tsp ground mustard
  • 3/4 tsp basil
  • 3/4 tsp oregano
  • 1/2 tsp coarse ground black pepper
  • 3/4 cup panko bread crumbs
  • 1/3 cup red bell pepper (we couldn't find any red, so we chose an orange bell instead, just slightly less sweet as reds are known for being as such)
  • 4 tbsp (2 oz) shredded parmesan cheese
  • 1 1/2 cup spinach leaves, chopped (we didn't add this in because mom doesn't like spinach :c )

Directions:

  1. Preheat the oven at 400*F. Place the fish on a foil-lined baking pan (Half size hotel pan works) and sprinkle the salt across the fish.
  2. Mix the butter and the rest of the spices in a medium bowl. Brush the fish with about 1 tbsp of the seasoned butter.
  3. Stir together the panko crumbs, bell pepper, parmesan, and spinach with the remaining seasoned butter. Evenly distribute the mixture across the fillets until all are nicely covered. Press down gently on the topping to make sure it sticks to the fish.
  4. Bake in the oven for about 15 minutes or until the fish flakes easily.

This was a pretty spur of the moment dinner for us and didn't take much time to make at all. We made a prepackaged mix for Garlic Butter rice/risotto that went pretty well with it also.

For those of you that need something that is healthy and somewhat inexpensive, this is a pretty good meal for ya ^^
