Salmon with Orange Vinaigrette

Found this recipe a while back, and thought "Hey, this looks really good". So yeah, printed off a copy of the recipe and Viola~ my food dish of that week :3


Salmon with Orange Vinaigrette

Ingredients

  • 1 cup orange juice
  • 1 lime, freshly squeezed and juiced
  • 1 tsp chili powder
  • 1 tsp honey dijon mustard
  • 1/2 cup fat free Italian dressing (or regular, it's what we used to make this)
  • 4 salmon fillets, about 6 oz each
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 4 tsp minced fresh cilantro leaves (garnishing)

Directions

1.Place orange juice in a small saucepan. Bring to a boil and cook until liquid is reduced to about 1/4 cup. Cool slightly.
2. Transfer to a blender (careful, this stuff is hot!). Add the lime juice, chili powder and mustard, cover and process until well blended. (If you want more onion flavor; add about 4 teaspoons finely chopped red onion and blend) While pulsing, gradually add the italian dressing in a steady stream; process until well blended.

I didn't do the salmon filets like they said to in the original recipe, as instead of pan-frying them, we put the fillets onto the grill and cooked 'em that way. It's all up to you.

  1. Season salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium high heat. Add the fillets and cook for two minutes on each side.
  2. Heat oven to 400 degrees F. Transfer the salmon to a greased baking pan and bake for about 8-10 minutes or until the salmon is cooked thoroughly. Serve with orange vinaigrette and garnish with chopped cilantro leaves.

This dish came out even better than I had thought it would be! The citrus from the oranges, heat from the chili powder, and the sweet/tangyness of the mustard really blend well together and create a wonderful sauce for the salmon. This dish goes well with a sort of pasta, and also fresh/warm bread (as the vinaigrette is also great for dipping the bread in <3 )

    Oh, yes! Please do more fish recipes, I've never cooked fish and I want to desperately. And this looks amazing!

      I havent made/tried any other fish recipes since this one (tis a total shame as Im a complete sucker for seafood in general), but I do plan on finding out more!
