Hungarian Goulash

Made this dish tonight at my Basic Food Prep. class last year. Nothing fancy, but it's got great flavor and is easy to make.


Hungarian Goulash

Ingredients:

  • 1 lb Onions, medium dice
  • 1 fluid oz Lard or vegetable oil
  • 2 tbsp Hungarian paprika (I'm sure that regular paprika works fine, but -probably a slightly different taste)
  • 1 1/2 tsp Garlic, chopped
  • 1/4 tsp Caraway seeds
  • Salt- to taste (we used just over 1/4 tsp. of it)
  • 1/4 tsp Black pepper
  • 1 pint White (chicken) stock (2 cups for those not kitchen savvy, Can use brown (beef) stock also)
  • 2 oz. Tomato Paste
  • 2 1/2 lbs Beef stew meat

Directions:

  1. Saute the onions in the lard/oil, browning lightly.
  2. Add the paprika, garlic, caraway seeds, salt and pepper, mix well.
  3. Add the stock and tomato paste. Bring to a boil, then reduce to a simmer.
  4. Add the meat and continue simmering until the meat is very tender, approximately 1.5 hours. Adjust seasonings as needed.
  5. Serve with buttered egg noodles or mashed potatoes.

The green you see atop the goulash is a stem and chopped parsley. Not the best presentation, but it's still Very tasty.


Not really much to say about the dish, we were learning about beef and veal that night. I gotta say, I love eating babies :3 (veal is baby cow/steer)
