A month or so, I had an itching to make taquitos, but decided to do something a bit different from the cheesy chicken verde recipe I posted a long while back. Searching around, I found a base to build upon and came up with this tasty treat!
Baked Mango Salmon Taquitos

Directions:
1. Preheat oven to 450F. Drizzle olive oil over both sides of the salmon fillet, seasoning with salt and pepper, and place skin-side down on a baking sheet. Bake for 12-15 minutes until just cooked through and tender. (Don't overcook the salmon, remember, it's going back in the oven later to bake as taquitos!) When done, flake apart with a fork and let cool until it's able to be handled.
2. Turn down the heat of the oven to 400F. Line a baking tray, possibly the one used for the salmon, and lightly coat with cooking spray. In a medium bowl, combine the salmon, cheese, cilantro, and mango. In batches of four, place the tortillas into the microwave with a damp cloth or paper towel over them and heat for about 20 seconds each to soften and prevent cracking when rolling.
3. Taking one tortilla, scoop about 1/4 cup of the salmon mixture onto the center of the tortilla, sprinkle with the tobasco sauce, and then roll tightly. Place the taquito seam side down on the prepared baking sheet and repeat with the rest of the tortillas. When finished rolling, coat the taquitos lightly with the cooking spray. Bake for 20-25 minutes, until crisp.
4. While the taquitos bake, prepare the guacamole. Pitting and scooping out the meat of the avocados, mix first with the lemon juice and zest in a medium bowl. Finish mixing it with the onion, tomato, jalapeno, and season to taste.

Ghh, I don't like mango, but I LOVE salmon. These looks so tasty I'd totally give mango a second chance.
