Red Velvet Cake and Vanilla Buttercream Icing (with recipe)

Red Velvet Cake

Ingredients

1/2 cup butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla
1 cup buttermilk
2 tbsp red food color
2 cups cake flour
1/3 cup cocoa
1 tsp salt
1 1/2 tsp baking soda
1 tbsp vinegar

Directions

Preheat oven to 350°F and coat a 9x13 inch pan with nonstick spray.

Beat butter and sugar in a large bowl.

Add eggs and vanilla, beat well.

Stir in buttermilk and food color.

Mix flour, sugar, and salt in a separate bowl, then add to mixture.

Stir in baking soda and vinegar.

Pour into prepared pan and bake for 30-35 minutes.

Vanilla Buttercream Icing

Ingredients

1 cup butter, softened
4 cups confectioner's sugar
1/4 tsp salt
1 tbsp vanilla
4 tbsp milk
red food color (optional)
miniature chocolate chips (optional)

Directions

Beat butter on medium speed.

Add sugar and mix on low speed.

Add salt, vanilla, and milk and beat on medium speed.

If desired, mix in a small amount of red food color.

Spread on cake and, if desired, top with chocolate chips.
