This is Wormwood, a new character. They're a herbalist who collects mushrooms and herbs and shares them with travelers in need of an antidote (but beware, they'll always remember that you owe them a favour). Wormwood probably knows every single plant in the forest and their effects, which they discover by testing the plants/potions on unwilling victims. Remember those favours I mentioned?
