    This is why we drink milk instead of water. Milk is a base, while chili is an acid, so the former will neutralize the hot chili, while water does nothing due to it being neutral on the Ph scale.

      --almost. The heat from chili peppers comes from capsaicin, which is an oil and not water-soluble.
      Milkfat, however, is able to wash the oil away more efficiently (one reason why spicy Latin-American foods are often accompanied with sour cream or or crema Mexicana).
