I've got a poultry sensitivity, so i avoid eating the meat or eggs of any bird. I tried tofu as a possible alternative and was really impressed by the versatility of it for both applications!
General tips:
- The tofu does not need to be pressed; the extra moisture is beneficial.
- Put the bacon "seam" side down in your baking dish and it'll stay wrapped while cooking and be pretty on the plate.
- It's a good idea to occasionally "baste" the tofu by spooning the juices over the slices.
- Save and render/purify the bacon fat for a FLAVOR BLAST on the frying pan later
