My first time doing homemade baked "mac" and cheese. I had recently watched This is Spinal Tap, so when I was buying cheeses, I went with mixes and got the cheese count to 11. In the mix are Colby, Monterey Jack, Cheddar, Smoked Gouda, Smoked Provolone, Asiago, Parmesan, Romano, Fontina, Mozzarella and American cheeses.

The recipe was really simple and can be adapted to any number of cheeses:
1 lb uncooked ziti (or your favorite type of pasta)
1 lb shredded cheese (can be any type really)
1 tbsp butter/margarine
2 tbsp flour
2 1/2 c milk
about 1/4 c breadcrumbs
a dash of oregano (optional)

1: preheat oven to 350 deg F, cook the ziti to desired firmness

2: While the oven heats and the pasta cooks, melt butter in a large saucepan. Add in flour and milk gradually, stirring occasionally until the mixture is bubbly. Slowly add in cheese, stirring to mix it in well. Stir in oregano after the cheese.

3: Grease the inside of a 2 qt casserole dish. Add the cooked ziti and cheese sauce and stir the mixture. Top with breadcrumbs and bake for 25 minutes. Let stand for 10 minutes after removing the casserole from the oven.

Updated recipe

I have since honed this recipe to find the best cheese mix (in my opinion), as well as adding spinach for a slightly healthier and tastier dish. The quantity of pasta is reduced to keep everything comfortably in a 2 qt casserole dish with the addition of spinach.
~ 3/4 lb uncooked pasta of your choosing
8oz colby-jack
8oz smoked gouda (Alternately smoked gouda with bacon works really well)
2 1/2 cups milk
2tbsp flour
~ 1 cup chopped spinach (adjust to however much you feel like actually putting in)
about 1/4 c Panko style breadcrumbs
a dash of oregano (optional)

The steps are the same, except you also need to steam the spinach (or thaw if frozen) before adding it into the casserole dish. It should be mixed in with the noodles before adding the cheese sauce on top.
