A huge credit has to go to nosphaer for explaining cooking terms to me and guiding me through what ingredients were best, and giving me motivation to do some cooking!
This is my first actual meal I've cooked from scratch, I started out with something easy, chicken noodle soup!
This is a link to the recipe Chicken Noodle Soup I used on allrecipes.com.
Some things I learned from nosphaer:
Yellow onions are sweet and are eaten raw or grilled, and are good in a soup, and are what I used
Red onions are packed with flavor, usually in salads or burgers, bad in a soup
White onions are mellow and onion-y and are for boiling and are meh in a soup
Chicken stock > Canned Broth > Chicken Stock > Bouillon Cubes/Powder
1 tsp Bouillon Powder = 1 Bouillon Cube
Marjoram apparently goes well with chicken and southern dishes
One bay leaf in, one bay leaf out.
Margarine has unnatural trans-saturated fats and tastes like oil, whereas butter has cholesterol, a bit more flavor, and can be browned.
4 cups of chicken = 2 chicken breasts so 1 cup of chicken = .5 chicken breast
Wash your hands after handling your meat.
Plastic board for meat/chicken.
Wash your knife/hands when you switch between meat and veggies.
Sauté means to cook veggies at a high heat in oil and stir until cooked
Simmering is less than boiling and is 160-180F compared to 212F
Stuff I learned on my own:
Chopping does not allow you to be timid, you gotta just chop.
Watch where you chop or you'll have finger soup instead.
If it looks like way too much butter it's probably enough.
Onions do make you cry.
Peel onions before you chop them.
Chicken is super slimy and icky and gross before it's cooked.
Print out your recipe on paper before you start trying to make it.
Goddamn cohesion.
Tsp does not just mean a small (eating) spoon; Tbsp does not mean a normal-size (eating) spoon.
9 Bouillon Cubes, in 18 1/2 tsp scoops, seems like way too much bouillon but it was the right amount.
If there's powder that stays near the top, just keep letting it cook and it will dissolve away.
It's hard to stay in the simmering temperature range. stop boiling stop boiling stop boiling
Egg noodles taste good raw.
Eat soup with crackers.
Dark meat > White meat.
This recipe was delicious, I would completely make this again if I didn't have 8-9 servings left from making the soup.
