Evan talks with a very smooth Austrian burr when expressing himself in his native German although he is more French-sounding when speaking in English due to the fact that he learnt to speak both English and French while studying at the CAA in Geneva.

Even tempered and a gentleman to the core, this skewbald bull is highly thought of by his friends, family and colleagues. Evan is intelligent, polite and despite his hulking frame, a gentle and slightly introverted companion. He tends to come out of himself more when working in the kitchen: revealing a darker, more intimidating streak of authority that resides within. Thus, he is perceived as quite serious some of the time, often found deep in concentrated thought, barking orders or flat during conversation, which paints an off-putting picture of his persona. However horses seem to be the antidote to this deeply personal flaw. The kinder, more patient and calmly-assertive element of Evan’s being comes rushing to the surface in the moment that he pulls his jodhpurs on.

Head chef at the Baumanière 1850 in Courchevel, France during the ski season and from mid-April through to late November Evan teaches horse riding and gives guided treks of Courchevel’s many exquisite mountains while working at the Village des Poneys. Evan is very proud of his career in catering, recently boosted by gaining his first Michelin Star for the Baumanière, although he adores working with horses too and enjoys being able to balance both of his passions.
