Feta and olive jumbo ravioli with asparagus, zucchini, eggplant, and sausage

Two kinds of eggplant! Spicy pickled eggplant and roasted eggplant strips in oil.

Two kinds of sausage! Smoked apple sage field roast sausage, and a more conventional one with italian herbs and spices. Both vegetarian.

The asparagus was boiled alongside the ravioli with a dash of smoked celtic sea salt. We simmered the vegetables in the sauce with the roasted sausages. It reduced the liquid volume just a bit and helped the flavours meld really seamlessly.

This has probably been our best one yet, and a testament to how easy it is to eat well. These were all jarred ingredients and quite inexpensive for how nice it was!

Served with a slice of sourdough loaf and a bottle of coarse-filtered Sayuri sake.

    If you can get some fennels and leeks, give those a shot. I think they would go nicely with the other stuff you have been making, especially in ravioli fillings. Very much under-appreciated veg with so much love to give :)

      Good ideas! Onions and I don't get along but I'll definitely try the fennel some time, thanks!
