Thanksgiving Stuff - Sweet Potatoes

Oven roasted sweet potatoes w/ maple cayenne glaze...

3lbs. Sweet Potatoes; peeled, large diced

6 Tbsp. Unsalted Butter

6 Tbsp. REAL Grade A Maple Syrup

1/4 tsp Cayenne pepper

Canola Oil

**OPTIONAL:

1 cup shelled pecans; oven toasted

Preheat oven to 450 degrees. Align rack(s) into the middle of oven.

Toss the sweet potatoes in some canola oil. Just enough to coat them lightly. Evenly distribute them (one layer) on greased baking sheets. Bake until tender (pierced easily with a knife tip)...which should be approx. 15-20 min. Remove from oven to cool only slightly.

Meanwhile, melt the butter in a small saucepan. Once it begins to foam, add the maple syrup and cayenne. Cook for an add'l 3 min. Stirring constantly.

Place sweet potatoes into your serving vessel of choice and pour mixture over the sweet potatoes. Lightly toss to coat and serve warm.

**If using pecans: simply toast the pecans in the oven on a cookie sheet for about 5-10 min or until lightly browned. Sprinkle into the sweet potatoes and syrup mixture.
