A slight adaption to a recipe that my friend, Peach, found a few days ago. Today, the boyfriend was over for lunch so I decided I wanted to make a dessert/snack for us to enjoy. Fruity, creamy, and all around delicious, this is sure to be a quick favorite to for many out there.
Strawberry Cheesecake Bites
Ingredients:
Directions:
1. Wash the strawberries under cold water. Pulling off the green caps, take a paring knife (small knife, sorta like a small steak knife, but straight edge) and cut around the top's center on the strawberry. take out the center piece, and set aside.
2. Repeat with the rest of the strawberries until all are carved.
3. In a mixing bowl, or mixer, cream together the cheese, powdered sugar, and vanilla until smooth (the cream cheese will have taken a very light tan color from the vanilla and there is no more powdered sugar separate from the rest, takes about 2 minutes with mixer).
4. Using a butter knife or spoon, scoop and fill each strawberry with the mixture.
5. Put the vanilla wafers in a baggy and crush to a fine crumb (I left some small chunks in it, personal taste) and pour it into a small bowl.
6. Taking the strawberries one by one, dip the strawberries, cream first, into the crumbs and coat well. Do so until all are coated.
Variation:
Melt some chocolate chips, stir until smooth, and dip the strawberries. Set aside on a plate and place into fridge or freezer to cool chocolate. Viola, chocolate strawberry cheesecake bites~
This dessert or snack is actually really cheap for how easy and tasty they are. If you don't end up using all the cream filling in the strawberries, do not despair! You probably have a lot of vanilla wafers left over. Don't let them or the filling go to waste~
